But one feature we were drooling over was their liquid nitrogen ice cream bar from Schaffer's Genuine Foods. What the hell is liquid nitrogen ice cream?! The time it takes for an ice cream to freeze affects its texture. If you freeze something slowly, ice crystals become bigger than they would in a faster freeze. Liquid nitrogen is super cold and when it freezes ice cream (or in this case, gelato), it quickly forms tiny crystals while blending with the cream, leaving you with a super creamy finish.
